Turkey Burgers à la Française

Chef’s Notes: This richly flavorful grilled turkey burger captures the flavors of France with tarragon, shallots, and balsamic vinegar, and is covered with a decadent blue cheese and mushroom sauce. Delicious and indulgent…and still reasonably healthy! Bon Appétit!

Turkey Burgers à la Française
(serves 4)


1# fresh ground turkey (NOT the frozen stuff in a tube)
1/4 C. panko bread crumbs
2 T. balsamic vinegar
1 T. Worcestershire sauce
1 shallot, minced
1/2 C. fresh parsley (or 1/4 C. dried parsley)
3 tsp. dried tarragon
1 tsp. dried thyme
1 tsp. Mrs. Dash extra spicy seasoning blend (or crushed red pepper flakes)
Dash of salt and pepper


1 T. butter
1 T. flour
1/2 C. half-and-half
1/2 C. milk
2. oz. blue cheese, crumbled
4. oz. sliced mushrooms (preferably baby portabella)

Other ingredients:
2 slices of bacon, cooked and crumbled
2 C. fresh spinach
1 medium tomato, cut into 16 half-slices

To make burgers:
Place all ingredients in mixing bowl and combine thoroughly. (Optional: Refrigerate for 1 to 2 hours to allow flavors to incorporate.) Shape into 4 patties. Place in lightly oiled grill pan and cook over medium heat until done.

To make sauce:
Melt butter in heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add half-and-half and milk; cook over medium heat, stirring constantly, until thickened and bubbly. Add blue cheese and mushrooms, and continue cooking over low heat, stirring constantly until cheese melts.

To assemble:
Divide spinach and tomato slices evenly on 4 plates. Place one burger on each plate. Spoon an equal amount of the mushroom-blue cheese sauce over each burger. Top with equal amounts of bacon.
