Chef’s Notes: Guacamole ingredients – avocado, tomatoes, jalapeños, onion, and garlic – liven up some tofu in this tantalizing skillet dish that’s great for breakfast or dinner.
Guacamole Tofu Scramble
(Serves 1 or 2)
1/4# block extra firm tofu
1 C. cold broth – vegetable, chicken, or beef
2 T. olive oil
1 T. jalapeños
2 T. red onion, minced
1/2 T. garlic, minced
2 oz. cream cheese, cubed
1 Roma tomato, chopped (about 1 cup)
1 avocado, chopped (about 1 cup)
Place the block of tofu in broth and let soak for at least 30 minutes or up to overnight. (Marinating the tofu infuses it with flavor.) After the tofu has marinated, proceed with the rest of the recipe.
Heat olive oil in skillet over medium heat. Add jalapeños, onion, and garlic; sauté. Squeeze the tofu to remove excess liquid, crumble, and add to skillet. Cook until tofu just starts to brown, about 10 minutes. Reduce heat to medium-low, add cream cheese, and stir until the cream cheese melts. Add tomato and avocado and cook until heated through, about 5 minutes.
