Spicy Fish with Pineapple Relish


Chef’s Notes: This dish is absolutely beautiful. The pineapple salsa features a rainbow of colors – yellow, red, purple, and green – that perfectly offset the reddish-brown of the spicy fish. And the tangy salsa balances well with the fiery fish. Easy to make, wonderful to eat.

Spicy Fish with Pineapple Relish

Spicy Fish with Pineapple Relish
Serves 4

Relish:
1 C. fresh or canned pineapple tidbits
1/2 C. tomato, chopped
1/4 C. red onion, chopped
2 T. fresh jalapeno, minced
1/4 C. white wine
2 T. fresh parsley, chopped

Fish:
2 T. canola oil
4 (6 ounce) fish fillets (orange roughy, tilapia, or other mild white fish)
2 tsp. Cajun spice
Dash salt and pepper

Combine all relish ingredients, except parsley. Set aside.

Heat oil over medium to medium-high heat in a cast iron skillet. Season fish with Cajun spice, salt, and pepper. Add fish to skillet, and cook for 3-5 minutes on each side or until fish flakes easily with a fork. Transfer fish to serving platter, or individual plates.

Add parsley to relish, stir, and spoon over fish. Garnish with lime slices.
