Jalapeño & Sweet Cream Cheese Chicken Rollups Wrapped in Bacon


Chef’s Notes: Arby’s Jalapeño Bites with Bronco Berry Sauce (great concept, not so great product) were the inspiration behind this recipe. Spicy and sweet…yummy. And what if you stuffed those flavors inside a chicken breast? And what if you made it salty, too? Maybe wrapped it all up in bacon? Those thoughts led to this concoction. Sounds weird, tastes phenomenal. Spicy, sweet, salty – all mingling together in delicious harmony. (This recipe was submitted in the Taste of Home Chicken Champs recipe contest.)

Jalapeño and Sweet Cream Cheese Stuffed Chicken Wrapped in Bacon

Jalapeño & Sweet Cream Cheese Chicken Rollups Wrapped in Bacon

Jalapeño & Sweet Cream Cheese Chicken Rollups Wrapped in Bacon
(serves 4)

4 boneless skinless chicken breasts
8 oz. Neufchatel (light cream cheese), softened
1/4 C. strawberry preserves
1 jalapeño, minced (about two tablespoons)
8 slices bacon

Heat oven to 375 degrees. Pound chicken as thin as possible, 1/4-inch thick or less. In a small bowl, combine Neufchatel, preserves, and jalapeño. Spread this mixture onto chicken. Roll up each chicken breast. Wrap bacon around chicken breasts and place in glass baking dish. Bake 45 minutes, or until bacon is done and chicken is cooked through.
